Creative Ways to Use Your Muscadine Grapes

Muscadine Jam

Ingredients:

  • 4 cups muscadine grapes
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 packet pectin (optional, for a thicker consistency)

Instructions:
1. Wash and de-stem the grapes. You can leave the skins on for added texture and flavor.
2. In a large pot, mash the grapes with a potato masher or fork.
3. Bring the mixture to a boil over medium heat, stirring occasionally.
4. Add sugar and lemon juice. If using pectin, stir it in at this stage.
5. Continue to boil until the mixture thickens, about 10-15 minutes.
6. Pour the hot jam into sterilized jars and seal. Allow it to cool completely before storing.

Muscadine Wine

For those who enjoy a bit of fermentation, muscadine grapes make excellent homemade wine. This process takes a bit more time but yields a rewarding and personal touch to your wine collection.

Ingredients:

  • 10 lbs muscadine grapes
  • 2 lbs sugar
  • 1 packet wine yeast
  • Water (as needed)

Instructions:

  1. Wash and de-stem the grapes, then crush them to release their juice.
  2. In a large fermentation vessel, combine the crushed grapes with sugar and enough water to cover the mixture.
  3. Sprinkle the wine yeast over the top and stir gently.
  4. Cover the vessel with a clean cloth and let it sit in a warm, dark place for 1-2 weeks, stirring daily.
  5. Strain the mixture through a cheesecloth into a clean fermenting bottle, securing an airlock in place.
  6. Allow the wine to ferment for several months, then bottle and age.

Muscadine Salad

  2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
